Ever have one of those days? You know, the kind where you go to register for a Czech course real quick and leave, oh, 3 hours later? Yeah, today was one of those days. And the only cure for days like today is southern comfort. You know the kind of southern comfort I'm talking about. The kind that involves butter and gravy. This kind to be exact:
A heapin', helpin' of some yummy chicken tenders, mashed potatoes with gravy, and fresh green beans. I came across a recipe that claimed to produce chicken tenders the likes of Chik-fil-a. So I gave it a whirl. YUM-MY! Although I never would have thought to include it, powdered sugar is the secret ingredient in the batter. Here's the recipe for the batter:
1 egg
2 tbsp milk
1 cup flour
2 tbsp powdered sugar
1/2 tsp black pepper
1 tbsp salt
I usually use about a lb. of chicken and cut it into tenders, although you could just pound out breasts and fry them up that way or cut the chicken into nuggets. Pour enough oil in a skillet to fill halfway up the side and heat (medium heat) while you prepare the chicken. In a shallow bowl, beat the egg and stir in the milk.
In another shallow bowl or plate, combine flour, sugar, pepper, and salt.
Dip chicken in egg mixture until completely moistened. Roll the moistened chicken in the flour mixture. Repeat. Yes, I said "Repeat." We're talking fried chicken here and the only way to do it is to double-batter. If you run out of the egg mixture or flour mixture, just mix up some more and keep going.

Carefully drop the chicken into the hot oil and cook, turning once.
Remove and place on a paper towel-lined place. Lightly salt and serve.
